Vinification & grape variety

Grape varieties: Rolle 100%

Vinification: Bunches are harvested using a conveyor belt, thus preventing damage to the berries, and then carefully sorted and destemmed. Pneumatic presses are gravity-fed, in an oxygen-free environment to preserve the harvest’s potential. The must goes through cold stabulation for 8 to 10 days, followed by settling to obtain clear juices. Temperature is maintained between 14 and 17°C throughout the fermentation process for around ten days. The wines are then refrigerated to prevent malolactic fermentation, before maturing on lees with stirring.


Bright and clear colour. Intense and complex nose with citrus notes. A persisting mouth in the same vein that expresses its balance with a nice finish around notes of garrigue aromas (rosemary, sauge).

Tasting temperature: between 10 and 12°C

Cellaring: 3 to 5 years
