Description
Château des Demoiselles is a magnificent viticole domain of 300 hectares (of which 72 hectares of vignobles in A.O.P Côtes de Provence), ocated in the Var hinterland, in the Esclans valley. Essential destination for those who wish to immerse themselves in the heart of Provence. The sublime bastide from 1830 is a welcoming guest house which houses five rooms all decorated in a “Bohemian Provençal” spirit. Endowed with a green garden and a swimming pool, the estate cultivates the sweetness of life and well-being. This living space can be privatized throughout the year for a stay with friends, a family celebration or professional events.
Aurélie Bertin took back the direction of this family estate in 2007 and infused it with her dynamism, her modern vision and oenotourism of the rather traditional and artisanal job of the vigneron, her perfectionism and evedently her femininity.
The owner inscribed Château Sainte Roseline in a march towards sustainable developement. Once we obtained the HEV 3 (High Environmental Valuede level 3) certificate, we will aim for the label of "Vignerons Engagés". The domaine has equally anounced it's conversion to being bio and assured that from now on the production is 100% vegetal - Vegan (without any animal inputs) and it's property wines. The first vats certified Biological Agricuture will see the light of day in 2022.
A real jewel of the domaine, The the cuvée Château des Demoiselles has a strict parcel selection. The wines reveal a beautiful balance, between power and finsess. This red wine benefits from an AOP Côtes de Provence appellation.
Vinification & grape varieties
Pressed berries gently pressed by pneumatic presses , thus preventing the extractions of tanins. Grape juice decanted before the alcoholic fermentation begins. Temperatures maintained between 14 and 17°C throughout the fermentation, the duration of which varies from 10 to 14 days. Once this is complete, the wines are refrigerated to block the malolactic fermentation, then aged on the lees in vats with stirring.

Tasting
A beautiful pale pink collor. Fine nose that unveils hints of white peach and spices. It's fine and persistant mouth caracterised by hints of white flowers.
